Gluten Free Mediterranean Pasta Salad

Gluten Free and Clean Eating Pasta Salad

-1 bag of gluten-free pasta

-1 cup chopped organic cherry tomatoes

-1 cup chopped organic English cucumber

-1 cup marinated mozzarella (bite-sized and sliced)

-1 1/2 cups chopped organic bell pepper

-1 cup organic artichoke hearts sliced

-1 cup pitted Kalamata olives chopped

-1 clove fresh garlic minced (optional)

-1/4 cup chopped red onion (optional)

-Extra virgin olive oil, balsamic vinegar, salt and pepper to season

-Extra: Can use some dried Italian seasoning, lemon pepper, basil and oregano for more seasoning!


-Cook pasta as directed, set aside to cool

-Combine all veggies and cheese

-Add everything to cooked pasta and toss with olive oil, balsamic vinegar, and seasonings to taste

-Refrigerate and serve cold

Tip: Great for on the go lunches!
