Gluten Free Banana Pancakes

I am constantly trying to think of things that involve something other than bread because gluten is so heavy in the morning and doesn’t fill me up with energy (it actually does the opposite and makes me tired). So this TWO ingredient, super easy, and delicious banana pancakes are awesome and a must!

Ingredients: (depending on how many people)

  • 1 organic banana

  • 1 free range organic egg

  • 1 large heaping spoonful of organic peanut butter (optional)

  • 1 tsp cinnamon (optional)

That amount will fill one person up but if you are making this for several people just double the ingredients for every person, 2 bananas for two people, etc.

Directions:

In a mixing bowl combine the peanut butter, egg, banana, and cinnamon. Stir until banana has no more lumps. Add a little oil in a pan on medium heat until heated, then add about half a cup of mix. Makes about 3-4 medium size pancakes!
